Pizza soft inside crunchy outside

I think this is the recipe will make happy everyone, it’s really easy to prepare fast and tasty even without too many ingredients.

Ingredients for one baking tray:

  • 250 g flour 00,
  • 150 + 20 ml room temperature water,
  • 10 g brewer’s yeast,
  • 3 + 3 tablespoons extra virgin olive oil,
  • 2 pinches of salt.

Filling:

  • 4 sliced ​​cherry tomatoes,
  • desalted capers,
  • pitted olives,
  • basil, oregano, garlic.

Cooking:

Hot oven at 200 °

  • on the lower side for 10 minutes, then
  •  on the upper side for 5 minutes.

Proceeding.

Make a batter with 150 ml of water, brewer’s yeast and about 4 tablespoons of flour, cover and let rise until it becomes swollen.

Let it rise for about 20 minutes.

Meanwhile, dissolve the salt in the remaining 20 ml of lukewarm water and add 3 tablespoons of oil.

When the time is right, pour into the batter and mix everything until you have a soft and sticky dough.

Use one tablespoon of oil to grease your fingers and knead until it is nice and smooth.  Cover and let rise until doubled in volume, it will take about 30 – 40 minutes.

When the time is right, turn the dough into the baking pray greased with one spoonful of oil,

use the last one tablespoon of oil to grease your fingers and spread the dough over the whole surface.

Put the baking tray in the off oven and let it rise for 1 hour and a half, more or less.

Meanwhile, cut the cherry tomatoes into slices and salt them lightly, rinse the capers, dry them well and chop the garlic (if you like them).

When the time is right, remove the baking tray and turn on the oven at maximum temperature; season the pizza with the ingredients and when the oven is ready lower it to 200 ° C and put the baking tray in the oven. 

Bake for 10 minutes on the lower side and another 5 minutes on the upper side.

Other ingredients can be added in the last 5 minutes of cooking; remember if there are more ingredients then the cooking should be higher, but no more than 1 or 2 or 3 minutes.
